Ingredients

  • 200g firm tofu, crumbled
  • 1 cup fresh spinach
  • 1/2 cup cherry tomatoes, halved
  • 1 small sweet potato, diced
  • 1 tablespoon olive oil
  • 1/4 teaspoon turmeric (for color)
  • Fresh parsley, chopped (for garnish)
  • 2 slices of whole grain toast
  • 1/2 cup mixed berries (blueberries and strawberries)
  • Salt and Stevia to taste

Directions

  1. Heat olive oil in a pan over medium heat. Add diced sweet potatoes and cook until tender.
  2. Stir in crumbled tofu and turmeric, cooking for 5-7 minutes until the tofu is slightly browned.
  3. Add spinach and cherry tomatoes, cooking until the spinach wilts. Season with salt and Stevia.
  4. Toast the whole grain bread to your preference.
  5. Serve the tofu scramble garnished with fresh parsley, alongside the toast and a bowl of mixed berries.
