Ingredients
- 200g firm tofu, crumbled
- 1 cup fresh spinach
- 1/2 cup cherry tomatoes, halved
- 1 small sweet potato, diced
- 1 tablespoon olive oil
- 1/4 teaspoon turmeric (for color)
- Fresh parsley, chopped (for garnish)
- 2 slices of whole grain toast
- 1/2 cup mixed berries (blueberries and strawberries)
- Salt and Stevia to taste
Directions
- Heat olive oil in a pan over medium heat. Add diced sweet potatoes and cook until tender.
- Stir in crumbled tofu and turmeric, cooking for 5-7 minutes until the tofu is slightly browned.
- Add spinach and cherry tomatoes, cooking until the spinach wilts. Season with salt and Stevia.
